Came accross it via Next Step Integral - am thinking to come to Mount Madonna Center in August...
I really like your idea about examining our eating habits and investigating where the food we eat actually comes from. It's an excellent idea to make studnets feel, see and understand the way we are linked to everything.
I'm currently teaching my year 12 students (17-18 years old)in geography about agriculture and sustanability. I'm teaching at a  German High School - and they are the first course interested in these questions. I might try your idea as well - will probably modify it a little bit - as I only see them once a week.
Spring is slowly arriving here in southern Germany with typical showers, drizzles, short periods of sunshine but very enjoyable.
Enjoy the Easter Break - if there is any at your place,
